My family has been in the wholesale seafood industry for over 25 years. My grandfather was a marine biologist for the University of Georgia. My Father owns Eckerd Seafood, my aunt owns St. Simons Seafood, and my uncle owns Altama Seafood. Knives are some of the most important tools we use on a daily basis. From what I remember, the industry standard has always been Dexter Russel. We go through dozens of them each year. A few of my friends are charter captains and I fish recreationally year round. We always seem to have trouble keeping a good edge on our Dexter Russels. In my opinion they are overpriced and their quality has decreased. I talked to the guy who cleans and prepares fish for my father's company. He showed me his favorite knife and asked me to find more for him. It had been used/sharpened so many times that half of the blade was gone. I was barely able to read the words and symbols on it. I did some research and found out that it was a Mundial 6.25" boning knife. I found this site and couldn't believe how low the price was. It was strange to me that these were the favorite knives of man who has been cutting fish professionally for over 20 years. I ordered a few for him and a few my charter captain buddies. You can't beat the quality and value of these knives. They are durable enough for men who cut thousands of pounds of fish every week and cheap enough for guys who fish recreationally.
