    The Holiday Season is underway and for restaurants, caterers, and others in the foodservice industry, this is a busy time of year. Here are some tips for sprucing up your daily operation and making a memory for your customers that's both merry and bright.
    • Atmosphere is undoubtedly one of the best ways to set the tone. Pay attention to your lighting, the kind of music that's being played, and the overall feel of your establishment. Changing the decor in subtle ways can also be a nice way to ready your restaurant for the Holiday Season. Fall colored tablecloths or seasonal flower arrangments, jewel-toned votives for the Holidays, all of these things are simple ideas for sprucing up your look.     • Send a holiday email reminding customers about a special offer.   • Pumpkin Waffles...with a punch!

    With Autumn now in full swing, restaurant menus and home meals alike are changing their focus towards more seasonal dishes. One of the staples of many an Autumn food is the Pumpkin. Make a satisfying Fall breakfast with this spin-off of the classic, and if you're feeling adventurious, venture out and make your scrumptious Pumpkin Waffles in the shape of a Fleur de Lis or Texas state with our best-selling waffle makers!

    Pumpkin Waffles Ingredients 2 1/2 cups all-purpose flour 1/3 cup packed light brown sugar 2 1/4 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 2 teaspoons ground cinnamon 1 teaspoon ground ginger 1/4 teaspoon ground cloves 4 large eggs, separated 2 cups well-shaken buttermilk 1 cup canned solid-pack pumpkin 3/4 stick (6 tablespoons) unsalted butter, melted Vegetable oil for brushing waffle iron or cooking spray What You'll Need: Waffle Maker (Have you seen our Texas or Fleur de Lis shaped waffle makers?) Mixing Bowl Wire Whip Fine Sieve What You Do 1. Preheat oven to 250°F and preheat waffle iron. Sift together flour, brown sugar, baking powder and soda, salt, and spices. Whisk egg yolks in a large bowl with buttermilk, pumpkin, and butter until smooth. Whisk in dry ingredients just until combined. 2. In a mixing bowl whisk the egg whites until they hold soft peaks (as in, far softer than the over-beaten whites you'll see in my picture above). Fold them gently into the waffle batter, until just combined. 3. Brush waffle iron lightly with oil and spoon batter into waffle iron, spreading quickly.
