  • The Glassware Guide

    Whether you own a restaurant or you're a frequent diner, it is widely known that beverage sales contribute largely to a restaurant's overall profit. Deciding what glassware to stock at your facility is an important factor to take into consideration. It's also important to consider a line of glassware that will be easy to replace and build on as you grow. 99% of people who handle glassware have broken a piece of glass at some point along the way-it's an inevitable reality. In a restaurant environment, especially during rush hour, the chances of chipping or breaking a glass go up even more.  This "Glassware Guide" is an attempt to better familiarize our customers with the basic tips and good practices so that you can invest in glassware that will last. The two most common reasons that glasses break at the frequency they do  are as follows: THERMAL SHOCK: Thermal Shock occurs when a glass at a certain temperature comes in contact with another temperature extreme. For instance, a glass straight out of the dish machine shouldn't be used right away for ice water. The glass needs to cool down to room temperature  before it's safe to use. This works the same way when the variables are inverted: a cold glass shouldn't be exposed to high heat temperatures until it has reached room temperature. It's the drastic temperature changes that cause stress on the glass and consequently make it more susceptible to breakage. MECHANICAL SHOCK: Mechanical shock occurs when a glass comes in direct contact with another glass or clashes with something else {platter, spoon, sink, etc.}. These small, forceful impacts create invisible abrasions or weaknesses in the glass which make it highly susceptible to breakage over time. Mechanical Shock is perhaps the most common-yet most easily preventable way- to break your glassware. Tips To Remember:
    • Depending on the number of people you have dining make sure to have an adequate supply of glassware on hand so that your glasses coming from the dishwasher can get to proper temperature before going into service
    • When cleaning or polishing wine glasses don't rotate the bowl and the base in the opposite direction as this can cause the stem to break off
    • Some people think adding vinegar to the dish machine's final rinse helps result in streak-free glasses
    • Pick up glasses one by one, not in clusters, because friction occurs when grouped together
    • Never use glassware in the place of an ice scooper. If your glass breaks while in the ice supply it's not only difficult to see it & extract it, but it could end up in your customer's drink
    • When bussing tables, use caution and don't stack glasses. Rather, put into racks or trays for optimal transportation
    • Never store flatware in glasses
    • Never stack glass on glass when storing as it can get stuck and easily crack when stored this way.
    • Throw away any chipped or cracked glassware. NEVER serve to your customer when there is a flaw in the glass. To view our full selection of glassware click here.   • Mundial Knives

    Most aspiring and professional chefs {and home cooks for that matter} will agree that having sharp, efficient knives in the kitchen is of the utmost importance. At Mission we have a wide variety of knives and cutlery options to choose from. Today we are spotlighting Mundial for its state of the art manufacturing, superior quality, and competitive pricing. When holding two knives up side by side, it's hard to determine what edge will cut better, and overall, what knife is more efficient. This global brand has set itself-and it's knives-apart for a few key reasons:
    1. Unlike most competitors, Mundial knives have handles that are implied by injection molding. Ultimately, the handle is fused to the shank of the blade, creating a tighter seam while diminishing the chance for microbial bacteria to slip through.

    The Chinese New Year, otherwise known as the "Lunar New Year" or the "Spring Festival" has an immense significance and symbolism to the Chinese people. As feasts are made to honor past relatives and to usher in a new year, deciding the kinds of food to make plays a key role. Below are some foods that are widely eaten during the Chinese New Year that have interesting superstitions behind them. There are also a few that people stay away from to escape bad luck and misfortune.... Oranges & Tangerines: Symbolic of wealth and good fortune you will often see big bowls of these fruits to show off one's good luck. If the leaves are still attached, they also represent fertility. Melons & Pomelos: These large round fruits are symbolic of family and the wholeness and togetherness of families Chicken: Like the aforementioned fruits, chicken is symbolic of family and togetherness along with unity and prosperity. Remember to keep the feet and the head on when cooking! Fish: A whole steamed fish (eyes and all) is regularly served and signifies abundance. "Yu" is the Chinese word for fish and translates to "plenty" meaning that families are sustained in the future.  Noodles: Represent longevity in life and therefore they shouldn't be cut before serving! Turnips: In Chinese, turnips are called "cai tou" meaning "good luck" Egg Rolls: The Chinese belief is that when fried, these rolls look like "golden bars," representing good fortune. Duck: Fidelity Eggs: Fertility Shrimp:  Good luck Dumplings: Many families insert a golden coin into one of the hundreds of dumplings made during their celebration. Whoever bites into the golden dumpling is said to have immense wealth and prosperity in the coming year. Pomegranates: These red fruits are symbolic of happiness, thus driving away evil spirits. The seeds also play a part, symbolizing abundance and fertility. Foods to Avoid: Squid: Be very cautious if squid, known as "Yow Yu" is served to you during the Chinese New Year. It symbolically foreshadows that you will be fired in the coming year. White Foods: Although white can mean purity, white foods like tofu are mostly avoided during the 15 day festival, as white can also symbolize bad luck and even death.

It is likely that you have disposable dinnerware and silverware somewhere in your pantry. You most likely also have plenty of glassware. However, if you're running a little low you should probably consider buying more disposables for your upcoming event. You don't have to worry about guests breaking your glassware or using multiple plates. Plus, when you have lots of guests the cost of supplies goes down significantly. Find Bargains Avoid the stores that there specifically for party supplies. Not only do they mark up all of their items, they know that you will spend the money once inside their venue. Instead, visit your local dollar stores and flea markets. They have simple party favors, decorations, and snack foods. Consider making your own food instead of having the event catered. You can purchase your own quality chafing dishes to use numerous times and you can allow your guests to prepare their own party favorites. Determine Your "Must-Haves" Is champagne really a must-have? What about linens? If you can cut out some of your "must-haves" for a more simply done event you can greatly cut back on your spending. Instead of champagne, buy prosecco. Instead of linens, buy paper tablecloths. If the point of your event is for guests to mingle and be laidback, then allow yourself to feel that away about the event while planning it. Remember the milestone that you're celebrating and why you're celebrating it. The party shouldn't be about the superficial details, but about the individual or event that brought you all together in the first place.
