Albert Rigo and his wife, Sony, started in the food industry business by selling food to the Mexican army. They made and delivered microwavable hamburgers to the largest military camp in Mexico City. They served about 3,000 hamburgers a day. At one point they had to open a café to feed their growing staff. The café was so good that they decided to open their doors to the public.

The first University Draft House opened in Edinburg, Texas, seven years ago. They knew they wanted to open a location in McAllen. When they saw the unique space of the abandoned water treatment plant, they knew they had a perfect location for a McAllen University Draft House.

Since opening their first restaurant, Republic of the Rio Grande 22 years ago, Albert and Sony have always given back to the community. They have participated in events that raised money for scholarships for children, donating to high school cafes so the culinary students can develop their skills, participated in the cultural and arts foundations.
