  • Caring For ProTEAK

    We are crazy about Proteak's impeccable wood cutting boards and butcher blocks here at Mission Restaurant Supply. This company not only focuses on Renewable Forestry, but their products perform beautifully in both commercial and residential kitchen settings. Like any wood product, Proteak requires the proper care. Here are a few tips for sustaining your Proteak products:     Seasoning: Seasoning your new Proteak cutting board or butcher block is a vital step to take before its debut. Teaked wood has a highly porous surface so it's important to season the surface plenty and often to avoid cracking. {Try seasoning every other week.} The kind of oil you use to season the surface is equally as important. Proteak recommends using USP-grade mineral oil (no vegetable or cooking oil.) With the oil slightly warmed, apply it to the wood with a soft cloth, remembering to follow the grain direction. Normally the preliminary seasoning takes 4-5 coats letting each coat dry before applying the next. The oils below are also good options for seasoning your product:                 Coconut Oil                 Walnut Oil                 Almond Oil                 Beeswax Cleaning: Given the porous surface of wood you shouldn't ever soak your Proteak in a sink of soapy water. Also, avoid using extreme detergents that can penetrate and dry out the wood. Some options for cleaning? You can scrub the board with hot water and mild soap, making sure to thoroughly dry after cleaning, or you can use white vinegar, a mild chlorine bleach, or hydrogen peroxide.   • Margarita 101

    The Margarita is one of those classic, year-round drinks here in South Texas and it tends to sound better and better when the temperatures are on the rise. So we've decided to share with you a traditional Margarita Recipe, San Antonio style. Equal parts smooth, salty, sweet, and sour, this drink is delicious and refreshing. We like them best down here without all the concentrated syrup and fruity flavorings- just back to the basics. 

      Ingredients  {Makes 1 margarita}
    • 2 shots tequila
    • 2 shots freshly squeezed lime juice 
    • 2 shots Controy Licor de Naranjas {Orange Liquer for a subtle sweetness} or Triple Sec 
    • Big scoop of ice

    For Margaritas on the Rocks:  If you like your 'ritas' on the rocks, add all the contents to a shaker and shake away. Pour over ice and garnish with a wedge of lime. 
    For Frozen Margaritas: If you like your 'ritas' frozen you will add all the contents to a bar blender and let it mix until the ice is in small flakes and the drink is at a slushy consistency.   Now, raise your glass and as they in Spanish: !Salud!

  • French Onion Soup

    What is it about French Onion Soup in the winter? Full of flavor, satisfying, warm, and delicious, it always seems to do the trick. This soup seems to make its way onto both lunch and dinner menus in a variety of restaurant settings. Enjoy! Ingredients
  • 1 stick Butter
  • 4 whole Large (or 6 Medium) Yellow Onions, Halved Root To Tip, And Sliced Thin
  • 1 cup (generous) Dry White Wine
  • 4 cups Low Sodium Chicken Broth
  • 4 cups Beef Broth
  • 2 cloves Minced Garlic
  • Worcestershire Sauce
  • Several Thick Slices Of French Bread Or Baguette
  • 5 ounces, weight (to 7 Ounces) Gruyere Cheese, Grated What You'll Need
  • Dutch Oven/ Oven-Safe Soup Pot
  • Cooking & Serving Spoons
  • Measurers
  • Cheese Grater
  • Cutting Board & Knife
  • Bread Knife
  • Sheet Pan
  • Soup Bowls
  • What You Do 1. Preheat oven to 400 degrees. 2. Melt butter in a heavy soup pot or Dutch oven over medium-low heat. 3.  Add onions and cook, covered, for 20 minutes. 4. Place soup pot into the oven with the lid slightly ajar to ensure the onions will brown. 5.  Allow onions to cook in the oven for 1 hour, stirring at least once during the cooking process so onions won't stick and burn. 6. Remove pot from oven and place back on stovetop over medium heat. Stir, scraping off all the brown, flavorful bits. 7. Turn off heat and pour in wine. Turn heat back to medium. Cook wine for five minutes, allowing it to reduce. 8.  Add broths, Worcestershire Sauce and minced garlic and reduce heat to low. Simmer for 30 to 45 minutes. 9. Butter one side of the bread slices and broil over low heat, allowing bread to brown and become crispy. 10. When soup is ready, ladle into bowl or ramekin. Place crispy bread on top, and then sprinkle generously with grated cheese. 11.  Broil until cheese is melted and bubbly. Serve immediately. Recipe Courtesy of Ree Drummond of The Pioneer Woman

  • Mundial Knives

    Most aspiring and professional chefs {and home cooks for that matter} will agree that having sharp, efficient knives in the kitchen is of the utmost importance. At Mission we have a wide variety of knives and cutlery options to choose from. Today we are spotlighting Mundial for its state of the art manufacturing, superior quality, and competitive pricing. When holding two knives up side by side, it's hard to determine what edge will cut better, and overall, what knife is more efficient. This global brand has set itself-and it's knives-apart for a few key reasons:
    1. Unlike most competitors, Mundial knives have handles that are implied by injection molding. Ultimately, the handle is fused to the shank of the blade, creating a tighter seam while diminishing the chance for microbial bacteria to slip through.
