A Taste of the Mediterranean

For Jordanian-rooted Sawsan Abublan and her husband Ehap Sabri, opening Shawarma Press in Irving, Texas, was about fulfilling a dream and creating a place that served authentic, Mediterranean fast food in the Dallas-Fort Worth Metroplex. The restaurant opened in May 2017, and its name reveals the central menu item: the Shawarma Sandwich.

There are many things to love about the restaurant industry, yet perhaps the greatest of all are the people that comprise it. Food is a universal communion that binds us together through diverse stories, cultures, and far-flung flavors. We are honored to work with people every day who are lured to our shops by their unique dreams and culinary visions.

“For the past twenty years that I have lived in DFW, I have always craved this particular sandwich,” said Sawsan adding, “This is a sandwich you can find in Detroit or Houston but not in DFW.” By opening their business, the husband-wife duo is filling a void in the marketplace.

So what is a shawarma sandwich? Shawarma is actually the name of the meat that makes up the sandwich and is most often beef, chicken, or lamb. Its unique taste comes from a special marinade and a rotating grill that slowly cooks the meat to its signature savory tenderness.

“Well I’m very proud to say that every piece of equipment that I have in my restaurant actually came from Mission,” she said adding, “Every single piece plays an integral role in my daily operation; my most highlighted piece is of course the Shawarma Grill, without it I would not have a shawarma sandwich!” she said.

In addition to the Shawarma sandwich, Sawsan and her team pride themselves on serving made-from-scratch, authentic dishes prepared fresh every day. Everything, from the sauces and fresh-squeezed mint lemonade, is made in-house daily.

The Shawarma team is also careful to choose only the highest quality ingredients to ensure a freshness you can taste. “We are meticulous about our fresh ingredients and spices, high-quality meats, freshly prepared sauces and juices, and in-house baked bread, pies, and desserts.”

Just as important as these ingredients are to the restaurant’s success are the tools that transform them into memorable dishes. With this charitable spirit, Sawsan and her team have found a niche for themselves in the DFW community, serving up a taste of the Mediterranean to be savored and enjoyed for years to come.
