Brad Peak, Chief Analytics Officer, has been with Las Palapas for 13 years. When he started with Las Palapas, there were just 12 stores. Now Las Palapas has 21 locations with more on the way. Las Palapas will be expanding to Keller, Wylie, Austin, Corpus Christi, and Houston.

Las Palapas is celebrating 40 years in the industry this year. They love being part of the community, supporting the 100 Club of San Antonio, Christy's Hope for Battered Women and Children, offering discounts for police officers, and more.

Some of Las Palapas' popular promotions include Rollback Specials, where you can get one item for the price it was in 1981 on Mondays and Wednesdays, and Taco Tuesday, where you can buy two tacos and get one for free.

Brad Peak has been in the food industry for over 30 years. His current role with Las Palapas gives him the opportunity to work on the architecture plans from paper to the building being built to the equipment, tables, and chairs getting delivered. As the Chief Analytics Officer, he looks at what is going on in the business—what is selling and what is not selling, the success of marketing campaigns, the number of drive-through customers, etc.—in order to come up with ideas to help grow the brand.

For someone starting in the industry, Brad's advice is to know your business inside and out - dive into all the details of the restaurant's operations and know all the positions in the restaurant. He also notes you should hold people accountable and make sure you hire the right people.
