INGREDIENTS:
- 10-12 corn tortillas
- 1 cup vegetable oil
- 2 cups shredded rotisserie chicken
- 2 cups shredded Monterey Jack cheese
- 1 jar of Mi Tierra Tomatillo Sauce
Optional Garnishes: Avocado, Cilantro, Diced White Onions
DIRECTIONS:
- In a skillet over medium heat, add the vegetable oil. Once the oil is warm, add the tortillas one at a time to lightly fry them. Reserve the softened tortillas.
- Roll each tortilla with the shredded chicken and place in a casserole dish.
- Top the enchiladas generously with the Mi Tierra Tomatillo Sauce.
- Top with the shredded cheese.
- Place in an oven at 375 degrees for 10-12 minutes, just until the cheese is melted.
- Garnish with any of the optional garnishes.
