Mi Tierra Enchiladas Verdes

INGREDIENTS:

  • 10-12 corn tortillas
  • 1 cup vegetable oil
  • 2 cups shredded rotisserie chicken
  • 2 cups shredded Monterey Jack cheese
  • 1 jar of Mi Tierra Tomatillo Sauce

Optional Garnishes: Avocado, Cilantro, Diced White Onions


DIRECTIONS:

  • In a skillet over medium heat, add the vegetable oil. Once the oil is warm, add the tortillas one at a time to lightly fry them. Reserve the softened tortillas.
  • Roll each tortilla with the shredded chicken and place in a casserole dish.
  • Top the enchiladas generously with the Mi Tierra Tomatillo Sauce.
  • Top with the shredded cheese.
  • Place in an oven at 375 degrees for 10-12 minutes, just until the cheese is melted.
  • Garnish with any of the optional garnishes.
