Happy Cinco de Mayo! To celebrate, we are featuring a delicious Roasted Tomatillo Salsa recipe.

This recipe was provided by a Mission team member. The recipe has been in his family for three generations. The Cavazos family likes to pair the salsa with homemade empanadas. It's also a great accompaniment to tortilla chips or to add some pizzazz to your favorite Mexican entrée.

Roasted Tomatillo Salsa

Preparation time: 15 minutes

Makes about 32 ounces


  1. 12 to 15 small green tomatillos
  2. 6 jalapeño peppers
  3. 1 small garlic clove
  4. 1 bunch of cilantro
  5. 1 bunch of scallions
  6. Salt, pepper, and cumin to taste

Roast tomatillos, jalapeño peppers, and garlic clove on a grill.


  1. Roast tomatillos, jalapeño peppers, and garlic clove on a grill or oven broiled.
  2. Meanwhile, chop the cilantro and the scallions.
  3. Mix the roasted ingredients in a blender until well incorporated; set aside on a medium bowl.
  4. Add the chopped cilantro and scallions and finally season with salt, pepper, and cumin to taste.
  5. Let it cool at room temperature.
