INGREDIENTS:

  • 1 pound fresh green beans, trimmed
  • 1 yellow onion, sliced
  • 2 slices bacon, cut into 1″ pieces
  • ½ Tbsp. garlic, minced
  • Salt and pepper to taste

DIRECTIONS:

  1. Cook bacon in a saucepan over medium heat until almost crisp, about 6 minutes. Do not drain grease.
  2. Add sliced onion. Cook until onion is soft and golden brown, about 5 minutes.
  3. Stir in minced garlic and cook until garlic has softened and brown, about 1 more minute.
  4. Lower temperature to low heat. Wash green beans and place directly into saucepan. The water from the green beans will create steam to cook them.
  5. Stir, coating the green beans with the bacon, onions, and garlic. Place lid on saucepan and slow cook the green beans for about 20 - 45 minutes, depending on how tender you like your green bean. Stir occasionally.
  6. Once cooked to your liking, add salt and pepper to taste.
  7. Transfer beans and juice to a deep serving dish.
