Christian Ockels, Managing Member of Champs South Texas Meat Market

, has been in the cattle industry his whole professional life. He credits that experience for the inspiration to open a retail meat market.



At Champs Meat Market, you can find all kinds of meat: beef—with ribeye being a popular item—along with pork, chicken, and sausage made in house. Their philosophy is simplicity, quality, value, and freshness. And this applies to everything they do: selecting their meat provider, selecting their cuts, displaying their products.



"Because of their service and (our sales representative) Stephen," says Christian, "we decided that every chance we get, we want to go with Mission." As you browse through the full selection of products, you'll notice that everything is vacuum-sealed to maintain quality and freshness. Mission has provided their vacuum sealers and everything else they needed. A few years ago, they bought some walk-in coolers and freezers from Mission Restaurant Supply, and they quickly started getting more items: skewer sticks, beard nets, equipment for the new store. It's a long list!



Christian's advice to start a business: "Decide who you want to be and what you want to do, then simply figure out how to get there." It is important, he adds, to choose partners wisely to help guide you to make the best decisions.
