The cabinet is constructed of heavy duty stainless steel, features 18 levels and a glass door. It is capable of accommodating up to eighteen (18" x 26") sheet pans or up to thirty-six (12" x 20") food pans. The interior pan supports can be removed for thorough cleaning. Controls are housed on a panel located at the top of the cabinet which includes fan power control, thermostat, thermometer and a proofing and holding switch. The heating elements keep the cabinet temperature between ambient and 190 degrees Fahrenheit, while a fan blows warm air through a wind tunnel to eliminate cool air pockets, so every last bit of food keeps warm.
